. Taiwanese Style Cucumber Pickle .
This a very simple, healthy and delicious dish that i love since i was young. I remember my mum used to make it very long ago and nowadays i only get to eat it at some chinese restaurants back in Taiwan. I looked up the recipe online and decided to do it myself.
4 japanese cucumbers, 5 peeled garlics, 2 red chilies, 15g salt, sugar 1 tsp, vinegar 1 tsp, soy sauce 1 tbsp.
(for heavier taste: sugar 2 tsp, vinegar 2 tsp, soy sauce 2 tbsp)
(for heavier taste: sugar 2 tsp, vinegar 2 tsp, soy sauce 2 tbsp)
Wash the cucumbers. Cut each cucumber into 4 parts and divide each part into 4 about 3-4cm long strips.
Placed the cucumbers into a dish, add the salt in and mix well onto the surface of the cucumbers. Marinate for 20 mins.
While waiting for the cucumbers, cut the garlics and chilies into small pieces.
When the cucumbers are done, pour the salt water away and wash them again with cooked or distilled water, try not to use tap water for this step. Make sure there are no remaining water in the cucumbers after washing. You can try to taste cucumber to see if the saltiness is just nice.
If its fine, you can now add the garlics, chilies, vinegar, sugar and soy sauce into the cucumbers and mix well. Place the cucumbers into a sealed container and put in the fridge for at least 2 hours for it to chill.
You can serve it anytime once it chilled enough. Tastes better chilled more than a day or 2.
